Zucchini Chips

Zucchini Chips


Last week I decided to give up eating deep fried foods. So far pretty good. Fried zucchini is one of my facorites and its really hard not to eat. Wen I can across an old breading recipe for chicken and thought what if I tweaked it for zucchini. Can I just say “oh my loving goodness!” I decided to make them into chips and give them a bit more of a crisping. These are oven baked and soft and crisp at the same time. Move over French fries!.
So first  the ingredients
1/4 cup dry Italian breadcrumbs or plain
1/4 cup shredded fresh Parmesan cheese or grated
1/4 tsp seasoned salt I use Lawry’s
1/4 tsp garlic powder
1/8 tsp black pepper
2 tablespoons fat-free milk
2 small zucchini cut into 1/4-inch slices

Preheat oven to 425°.

Combine all of the first 5 ingredients in a bowl, Pour the milk in a shallow dish. Dip zucchini slices in milk, and then drop into bread mixture coating the slices.. Place zucchini slices on a cookie oven safe rack and put rack on a baking sheet. Bake for 30 minutes or until crispy. Serve with your fave dipping sauce or go crazy and eat them as is.

Lemon Garlic Shrimp Linguini

Lemon Garlic Shrimp Linguini

 

I love seafood even though my skin gets irritated at times and breaks out. I can’t stop myself when it comes to a great shrimp or scallops dish. This is one of my favorite shrimp and pasta dishes I make. My son asks for it all the time. We don’t get to make seafood as much as I would like since we are the only 2 that like it in the family. Boo. But some nights we are like so what! we want it! This is always a go to.

So first  the ingredients

  • about 24 medium shrimp, peeled and deveined
  • 1 lb linguine
  • 1/4 cup sliced or diced onion
  • 1/2 cup frozen spinach thawed and squeezed
  • 1 cup frozen corn niblets thawed
  • 4 T EVOO
  • 2 T butter
  • 1 T Italian seasoning
  • 3 t garlic or to taste
  • pinch of salt
  • 1 T lemon pepper seasoning
  • 1 fresh lemon squeezed optional

Make pasta as instructed on packed.

Meanwhile add onions to 1 T butter (or oil) in a skillet and sauté about 3 min. Add 1 T butter, the Italian seasoning, garlic, salt and lemon pepper seasoning to pan Stir. Add shrimp to onions and continue sautéing for about 5 min until shrimp is done.

Drain pasta and return pot to stove. Put the corn and spinach into pot and heat through. Return the pasta to the pot and stir. Add the EVOO to the pasta and mix to fully coated. Combine the onion shrimp mixture to the pasta and incorporate until all pasta is coated with the garlicky goodness. Squeeze lemon over pasta and serve with garlic bread.

Hope you love this as much as we do. BTW you can tweak this in so many ways this is just what a simple shrimp scampi pasta recipe has turned into over the years for my son and I.

  • 2 – 2oz Cobalt Atomizer Bottles
  • Split the liquid into the 2 bottles and put in different rooms in house.

Chicken and stuffing

So it got a wee bit chilly here the last few evenings.  The days are still nice and sunny but it does get about 45-50 at night.  I don’t like to turn on the heat unless I have to since it gets so dry in here. I’ll just grab a sweater and snuggle in. Since my RA has been on overdrive these past 2 weeks I decided to make dinner in the crock again.  Did I mention I am loving my crock LOVING! I was looking in my pantry and realized I have everything I need for Chicken and Stuffing. So that’s perfect.  Here’s my simple and easy crockpot chicken and stuffing recipe.

Ingredients:

  • 4-5 Chicken Breasts (boneless/skinless thawed)
  • 1 c Shredded Mozzarella Cheese
  • 2 cans Cream of Mushroom Soup
  •  1/4 c Milk
  • 1 pk dry stuffing mix
  • 1 stick butter
  • Broccoli – optional

Place chicken breast in crockpot.

Top with 1 c Shredded Mozzarella Cheese.

Mix 2 cans Cream of Mushroom Soup and 1/4 c Milk

Pour over chicken and cheese.

Sprinkle 1 pk dry stuffing mix over chicken.

Melt 1 stick butter in microwave in 30 sec increments and drizzle over stuffing mix.

Cook 6 hours on low or 3-4 hours high

You can then serve it with a side of steamed broccoli and eat. Tasty.

BBQ Chicken Salad

About a year ago I went to a restaurant with my BF and we ordered a bbq chicken salad to share.  It was the beginning of a love affair.  No other salad would ever do it for me again.  I was completely smitten. It was a truly balanced salad.  It has your protein, green ruffage, veggies, dairy, grains, beans, fruits…

Fruit? Yes it has tomatoes on it and even though is a hot button it is a fruit.  One that I omit however as I am not a fan of fresh tomatoes.

Fast forward a few months and enter my craving for this sexy salad. I didn’t have the funds or time to drive all the way over there to get one.  I realized I had everything I needed to make the salad right here at home.  Yes yes yes!

I love another hot button of debate fruit.  Avocados! oh yes the butteriness, the creaminess, the versatility of it.

Similar to the tomato , the avocado is a fruit that is often referred to as a vegetable.

Avocados, aka alligator pears, are in the Lauraceae family (laurel). Like some other fruits (apricots, plums, peaches) avocados have in the center a single large pit (seed).

There are so many health benefits of an avocado. And bonus it helps RA.  So is it an fruit or vegetable?  I don’t really care.  I use it inter-changeable.

I have modified it to our specifications and likes and needs.  Give it a try and see for yourself.

Pre-heat oven to 350 degrees.  Brush chicken with BBQ sauce place in oven for 25 – 30 minutes or until done.

Remove chicken, let cool slightly, then chop chicken.

In a large bowl add all lettuce and spinach.

and fried onions and/or tortilla chips(I didn’t have tortilla chips so I added french fried onions and it was amazing)

Top with sliced chicken then

Top with avocado slices.

and bbq sauce then toss and serve!

Serves 3 er I mean 4.  That is if you’re good at sharing.

Say Cheesecake

Since yesterday was Brownie day and today is National Pastry Day I decided to make – drum roll please – neither of those!  These days of treats did make me humgry (it’s when you are hungry and hum Mmmm!) for my fave dessert-Cheesecake! Oh my I need a slice now. White chocolate raspberry swirl no cook cheesecake. My yes dear whatever you want dessert. And it’s super easy to make.

CRUST:
1 1/4 c. graham cracker crumbs
3 tbsp. sugar
1/3 c. butter, melted
Mix ingredients and press into bottom and sides of 9 ­inch pie plate.

Or buy one pre-made (not that i did this as she whistles)

FILLING: Or the light fluffy creamy mmmness
1 (8 oz.) cream cheese – I like mine a little cheesier ( is that even a word, is now) so I use 1 1/2 (12 oz)

1 1/2 c. Cool Whip – Or like me half a tub of cool whip

2014-12-09 19.26.311/2 c. white chocolate chips  – plus more to your liking                                                                                           Fresh raspberries, optional.

Mix cream cheese and honey together until smooth.

Fold in Cool Whip. Mix until smooth.

Add fruit spread swirling it into mixture for a swirled look or add to cool whip to mix it in thoroughly.

Spread 1/4 c white chocolate chips to pie crust.

Pour mixture into crust (reserve 1/2 c mixture).

Top with remaining white chocolate chips.

Add fresh raspberries if you like, Chill at least 2-4 hours before serving (if you can).

So wondering what the reserved cheesecake filling is for? My son and I take nilla wafers or strawberries and use it a dip. Sinfully mmm.

Germaphobe

Play Monopoly Day – I’ll be the banker.

Germaphobe – a person with an extreme fear of germs and an obsession with cleanliness.

I have always been a little bit weary of germs. I unconsciously hold my breath when someone coughs or sneezes around me. I have a spray bottle filled with distilled water and lemon EO that i will spray on you if you show any signs of illness. I use it kinda like to Pavlov effect.  You cough you get sprayed, you sneeze you get sprayed. Maybe I will reprogram their body not to get sick anymore. I wash my hands so much you’d think i worked in a hospital. Since getting RA i may be a little worse since my immune system takes twice as long to get better. For Christmas I’m asking for one of those air lock sanitizing chambers for my front door. Either that or expect to get prison hose sprayed before coming in.  I like to have as natural as possible products in my home. Lemon EO is great, but I recently made up a batch of 4 thieves oil . It’s supposed to be the all-encompassing healthy oil. I’m giving it a try this winter season. Here’s the recipe.

Ingredients:

40 drops Clove Bud essential oil

35 drops Lemon essential oil

20 drops Cinnamon Bark essential oil

15 drops Eucalyptus essential oil

10 drops Rosemary essential oil –

I also added 10 drops Lavender essential oil and 5 drops Tea Tree oil to mine, but that’s just my choice.

Abducted by Aliens

TAKE A HIKE DAY-Since i don’t have the stamina to go on a hike i went for a walk. The first time i have walked around my neighborhood.

Was I abducted by aliens? Aliens that want to rule the world. They tried to break me. To keep me from continuing to be an outgoing, strong, loving and determined woman. They tried to take my control away. But I got up, pushed my self off and ran off. Well limp walked as fast as i could. I have had quite a few knock downs in my life but I continue to fight.  I have been poked and proded and examined. They want to take us down by making us weak and causing us pain and hopelessness. This is how they will try to take over the world. No aliens will be taking over on my watch. Just like RA won’t take control over my life. Those “R”elentless “A”liens  obviously don’t know that us women did that a long time ago. Fight the invisible fight!
